Ingredients

2 lbs Yukon Gold or russet potatoes

2 tbsp olive oil (or fat of choice)

½ tsp baking soda

1 tsp sea salt

Fresh herbs (rosemary, thyme), optional


Instructions

1. Preheat oven to 425°F (220°C)

2. Cut potatoes into wedges

3. Boil in water with baking soda for 5 minutes

4. Drain, rough up surfaces with fork or colander

5. Toss with oil, salt, herbs

6. Arrange on baking sheet/skillet in one layer

7. Roast 8–10 minutes, flipping halfway

8. Serve hot
