Quick & easy 15‑minute crispy potatoes with golden exterior and fluffy interior – restaurant-quality side dish.
Ingredients
2 lbs Yukon Gold or russet potatoes
2 tbsp olive oil (or fat of choice)
½ tsp baking soda
1 tsp sea salt
Fresh herbs (rosemary, thyme), optional
Instructions
1. Preheat oven to 425°F (220°C)
2. Cut potatoes into wedges
3. Boil in water with baking soda for 5 minutes
4. Drain, rough up surfaces with fork or colander
5. Toss with oil, salt, herbs
6. Arrange on baking sheet/skillet in one layer
7. Roast 8–10 minutes, flipping halfway
8. Serve hot

Parboil ahead and refrigerate for extra crisp.
Use cast iron or rimmed baking sheet for best heat distribution.
