These crispy air fryer egg rolls are filled with a delicious mixture of vegetables and protein, making them a perfect breakfast option.
Ingredients
1 cup shredded cabbage
1/2 cup shredded carrots
1/2 cup cooked chicken, diced
1/4 cup green onions, chopped
1 tablespoon soy sauce
1 teaspoon garlic powder
1 package egg roll wrappers
Cooking spray
Instructions
1. 1. In a large bowl, combine cabbage, carrots, chicken, green onions, soy sauce, and garlic powder.
2. 2. Lay an egg roll wrapper on a flat surface with a corner facing you.
3. 3. Place 2 tablespoons of the filling in the center of the wrapper.
4. 4. Fold the bottom corner over the filling, then fold in the sides, and roll tightly.
5. 5. Repeat with remaining wrappers and filling.
6. 6. Preheat the air fryer to 375°F (190°C).
7. 7. Spray the egg rolls lightly with cooking spray and place them in the air fryer basket.
8. 8. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
9. 9. Serve hot with your favorite dipping sauce.
Notes
For a vegetarian option, substitute chicken with tofu or additional vegetables.
Make sure not to overfill the wrappers to prevent them from bursting during cooking.
