Ingredients
4 large firm green tomatoes, sliced 1/4 to 1/2 inch thick
2 large eggs, beaten
1/2 cup whole milk
1 cup all-purpose flour
1 cup yellow cornmeal
1/2 cup panko breadcrumbs
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional)
Cooking spray or olive oil spray
Instructions
1. Preheat your air fryer to 400°F (200°C) for 3-4 minutes.
2. Slice green tomatoes into even 1/4 to 1/2 inch thick rounds and pat completely dry with paper towels.
3. Set up three dredging stations: flour in first dish, beaten eggs mixed with milk in second dish, and cornmeal mixture (cornmeal, breadcrumbs, salt, pepper, paprika, garlic powder, cayenne) in third dish.
4. Dredge each tomato slice first in flour, then egg mixture, then cornmeal coating, pressing gently to adhere.
5. Arrange coated tomato slices in air fryer basket in single layer, ensuring they don’t overlap.
6. Spray lightly with cooking oil for enhanced crispiness.
7. Air fry for 5-6 minutes, then carefully flip using tongs.
8. Cook additional 4-5 minutes until golden brown and crispy.
9. Serve immediately while hot with your favorite dipping sauce.
Notes
For best results, choose firm, unripe green tomatoes without soft spots.
Don’t overcrowd the air fryer basket – cook in batches if needed.
Pat tomatoes completely dry before coating to prevent soggy breading.
