Ingredients
4 boneless, skinless chicken breasts
8 slices of bacon
1 cup BBQ sauce
1 cup shredded cheddar cheese
1 tablespoon olive oil
Salt and pepper to taste
Instructions
1. Preheat your grill to medium-high heat
2. In a skillet, cook the bacon until crispy, then crumble into small pieces
3. Butterfly each chicken breast by slicing horizontally almost all the way through
4. Season the inside of each chicken breast with salt and pepper
5. Fill each chicken breast with BBQ sauce, crumbled bacon, and shredded cheddar cheese
6. Close the chicken breast and secure with toothpicks
7. Brush the outside with olive oil and season with salt and pepper
8. Grill for 6-8 minutes per side until internal temperature reaches 165°F
9. Brush with more BBQ sauce during the last few minutes of grilling
10. Let rest for 5 minutes before serving
