Description

This ultimate bacon cheeseburger grilled cheese combines the best of both worlds – crispy grilled cheese and juicy cheeseburger flavors. Made with premium applewood bacon, multiple cheese varieties, and perfectly seasoned ground beef for the ultimate comfort food experience.

8 slices thick-cut sourdough bread

1 lb ground beef (chuck and brisket mix preferred)

8 slices thick-cut applewood-smoked bacon

4 slices sharp cheddar cheese

4 slices Monterey Jack cheese

2 slices aged Gruyère cheese

4 tablespoons butter (room temperature)

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 medium tomatoes, sliced

4 pickle slices

Optional: caramelized onions, pickled jalapeños


Instructions

1. Cook bacon in a large skillet over medium heat until crispy and golden brown, about 6-8 minutes. Remove and set aside on paper towels.

2. In the same skillet, cook ground beef over medium heat, breaking it into small pieces with a spatula. Season with garlic powder, salt, and pepper. Cook until browned and fully cooked, about 8-10 minutes. Drain excess fat.

3. Butter one side of each bread slice. This will be the outside of your sandwich for that perfect golden crust.

4. Heat a large skillet or griddle over medium heat. Place bread slices butter-side down in the pan.

5. On the unbuttered side, layer ingredients in this order: cheddar cheese, cooked ground beef, crispy bacon, tomato slices, pickles, Monterey Jack cheese, and top with Gruyère.

6. Place the second slice of bread on top, butter-side up.

7. Cook for 3-4 minutes on the first side until golden brown and crispy. Carefully flip with a large spatula.

8. Cook for another 2-3 minutes on the second side. Cover the pan briefly to help cheese melt completely.

9. Remove from heat when both sides are golden brown and cheese is fully melted and gooey.

10. Let cool for 1-2 minutes before cutting diagonally. Serve immediately while hot and cheese is still melty.

Notes

For best results, use thick-cut bread that can hold all the fillings without falling apart.

Don’t rush the cooking process – medium heat ensures the cheese melts completely while achieving the perfect golden crust.

Cover the pan briefly during cooking to create steam that helps melt the cheese evenly.

For extra flavor, add caramelized onions or a special sauce like garlic aioli or BBQ sauce.

This recipe can be made vegetarian by substituting plant-based ground meat or grilled portobello mushrooms.

Store leftover components separately and assemble fresh sandwiches when ready to eat.
