- 1 pound bacon
- 1 box macaroni and cheese
- 1 cup shredded cheddar cheese
- 12 small flour tortillas
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups milk
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Cook the bacon until crispy, then chop into small pieces.
- Cook the macaroni and cheese according to package instructions.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes.
- Gradually whisk in the milk and cook until the sauce thickens, about 5 minutes. Season with salt and pepper.
- Stir in the shredded cheddar cheese until melted, then add the cooked macaroni and bacon pieces.
- Place a spoonful of the mac ‘n’ cheese mixture onto a tortilla and roll up tightly. Place seam-side down on the prepared baking sheet.
- Brush the taquitos with vegetable oil and bake for 15-20 minutes, until golden brown and crispy.
- Serve hot with your favorite dipping sauce and enjoy!
