Ingredients
2 pounds ground beef (80/20 lean-to-fat ratio)
1 packet ranch seasoning mix
1 cup shredded cheddar cheese
2 large eggs
1/2 cup breadcrumbs
6–8 slices crispy bacon, crumbled
Optional: diced onions, minced garlic, chopped pickles, Worcestershire sauce
Instructions
1. Preheat oven to 350°F and line a baking dish with parchment paper
2. In a large bowl, combine ground beef, breadcrumbs, eggs, and ranch seasoning mix
3. Mix ingredients gently with your hands until just combined – don’t overmix
4. Shape the mixture into an even loaf in the prepared baking dish, forming a slight dome
5. Bake for 35-40 minutes until internal temperature reaches 150°F
6. Add crumbled bacon and shredded cheddar cheese on top
7. Continue baking for 10-15 minutes until cheese melts and internal temperature reaches 160°F
8. Let rest for 10 minutes before slicing and serving

For best results, use fresh ground beef with 80/20 fat ratio for optimal moisture
Let the meatloaf rest after baking to help it set for easier slicing
Store leftovers in refrigerator for 3-4 days or freeze for up to 3 months
