Description

Ingredients

1 lb ground beef (80/20)

½ cup breadcrumbs

¼ cup diced onions

¼ cup diced mushrooms

¼ cup shredded Swiss cheese

2 slices thick-cut bacon, cooked and crumbled

1 large egg

¼ cup milk

1 cup beef gravy

Salt and pepper to taste


Instructions

1. Preheat oven to 350°F and lightly grease a baking dish.

2. Cook bacon until crispy, then crumble and set aside.

3. In a large bowl, combine ground beef, breadcrumbs, diced onions, diced mushrooms, Swiss cheese, and crumbled bacon.

4. Add egg, milk, salt, and pepper to the mixture.

5. Mix until just combined – avoid overmixing.

6. Form mixture into a loaf shape and place in prepared baking dish.

7. Bake for 45-50 minutes until internal temperature reaches 160°F.

8. While meatloaf bakes, warm beef gravy in saucepan with additional diced mushrooms.

9. Simmer gravy for 5-10 minutes.

10. Let meatloaf rest for 10 minutes after baking.
