This bacon-wrapped jalapeño popper meatloaf combines spicy jalapeños, creamy cheese, and crispy bacon for the ultimate comfort food experience. Perfect for keto diets and family dinners.
Ingredients
2 lbs ground beef (80/20 lean-to-fat ratio)
8 oz cream cheese, softened
6–8 fresh jalapeños, diced
12–15 thick-cut bacon strips
2 large eggs
1/2 cup almond flour
1 cup shredded cheddar cheese
1 tbsp garlic powder
1 tsp smoked paprika
1 tsp salt
1/2 tsp black pepper
Instructions
1. Preheat oven to 375°F (190°C)
2. Mix cream cheese, cheddar cheese, and diced jalapeños for filling
3. Combine ground beef, eggs, almond flour, and seasonings in large bowl
4. Create bacon weave on silicone mat over baking sheet
5. Shape half the meat mixture into rectangle on bacon weave
6. Add cheese filling down center, leaving borders
7. Top with remaining meat mixture and seal edges
8. Wrap bacon weave around entire meatloaf
9. Bake for 45-60 minutes until internal temperature reaches 160°F
10. Let rest 10 minutes before slicing
Notes
For milder heat, remove jalapeño seeds and membranes
Can be prepared 24 hours in advance and refrigerated
Use meat thermometer for accurate doneness
Let rest before slicing to maintain shape
