Ingredients
4–5 medium Russet potatoes
1 pound high-quality bacon
2 cups shredded cheddar cheese
Salt and black pepper to taste
1 teaspoon garlic powder
1/2 cup sour cream
2–3 fresh green onions, chopped
Optional: diced jalapeños
Optional: red pepper flakes
Instructions
1. Preheat oven to 400°F and wash potatoes thoroughly
2. Pierce potatoes multiple times with a fork
3. Bake potatoes for 40-45 minutes until fully cooked
4. Allow potatoes to cool for 20 minutes
5. Cut potatoes in half lengthwise and scoop out flesh, leaving thin layer
6. Cut bacon strips in half
7. Wrap each potato skin with bacon and secure with toothpicks if needed
8. Place on baking sheet and bake for 20-25 minutes until bacon is crispy
9. Add shredded cheddar cheese on top
10. Bake additional 5-10 minutes until cheese melts
11. Remove from oven and top with sour cream and green onions
12. Serve immediately while hot and crispy
