Ingredients

500g fresh rhubarb, cut into 2cm pieces

150g plain flour

200g caster sugar

100g brown sugar

125g unsalted butter, room temperature

250ml whole milk

2 large eggs

2 teaspoons baking powder

1 teaspoon vanilla extract

Pinch of salt

Extra butter for greasing


Instructions

1. Preheat oven to 180°C (160°C fan). Grease a 23cm square baking dish with butter.

2. Wash and trim rhubarb, then cut into uniform 2cm pieces. Lightly salt and let drain for 15 minutes.

3. Cream butter and caster sugar in a large bowl until light and fluffy, about 3-4 minutes.

4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.

5. In separate bowl, whisk together flour, baking powder, and salt.

6. Alternately add flour mixture and milk to butter mixture in three additions, beginning and ending with flour.
