Ingredients
– 1 lb Bavarian sausages, sliced into bite-sized pieces
– 1 cup beer (lager or wheat beer recommended)
– 2 cups shredded Gruyere cheese
– 1 cup shredded Emmental cheese
– 1 tbsp cornstarch
– 1 clove garlic, minced
– 1 tsp Dijon mustard
– Salt and pepper to taste
– 1 batch of soft pretzel bites, for dipping

2. Preheat your fondue pot or a heavy saucepan over medium heat.
3. In a small bowl, toss the shredded cheeses with cornstarch and set aside.
4. Add the minced garlic to the pot and sauté for 1-2 minutes until fragrant.
5. Pour in the beer, and bring to a gentle simmer.
6. Reduce the heat to low and gradually stir in the cheese mixture, a handful at a time, until melted and smooth.
7. Stir in the Dijon mustard, salt, and pepper.
8. Add the sliced Bavarian sausages to the pot and cook until heated through, about 5 minutes.
9. Serve immediately with soft pretzel bites for dipping.

– Feel free to use other types of cheese, like cheddar or mozzarella, for different flavor profiles.
– The fondue can be kept warm over low heat while serving, just stir occasionally.
– If you don’t have a fondue pot, a slow cooker can also work well.
