Ingredients

2 lbs ground beef (80/20 lean-to-fat ratio)

1/2 lb ground pork sausage

8 strips crispy bacon, chopped

3 cloves fresh garlic, minced

1 medium onion, finely chopped

1 1/2 cups sharp cheddar cheese, shredded

3/4 cup homemade BBQ sauce (divided)

1 cup panko breadcrumbs

2 large farm-fresh eggs

1 tsp salt

1/2 tsp black pepper

1 tsp paprika

1/2 tsp onion powder


Instructions

1. Preheat oven to 350°F and line a baking sheet with a wire rack

2. Cook bacon until crispy, chop into pieces, and set aside (reserve 2 tbsp bacon fat)

3. In a large mixing bowl, gently combine ground beef, pork sausage, breadcrumbs, eggs, minced garlic, chopped onions, salt, pepper, paprika, and onion powder

4. Add half the chopped bacon and 1/4 cup BBQ sauce to the meat mixture, mix gently with hands

5. Shape mixture into a loaf on the prepared wire rack

6. Create a slight indentation down the center and stuff with shredded cheddar cheese

7. Wrap remaining bacon strips around the entire loaf

8. Brush top with remaining BBQ sauce

9. Bake for 60-75 minutes until internal temperature reaches 165°F

10. Let rest for 10-15 minutes before slicing and serving

Notes

For best results, use 80/20 ground beef to maintain moisture

Don’t overmix the meat to avoid a tough texture
