Ingredients
2 lbs 80/20 ground beef
2 cups prepared mac ‘n’ cheese (cooled)
8 strips crispy bacon
4 tablespoons BBQ sauce
4 sturdy burger buns
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Optional: sharp cheddar cheese slices
Optional: caramelized onions
Instructions
1. Prepare mac ‘n’ cheese and let cool to room temperature
2. Cook bacon strips until crispy and set aside
3. Divide ground beef into 8 thin patties
4. Season patties with salt and pepper
5. Place cooled mac ‘n’ cheese in center of 4 patties
6. Top with second patty and seal edges well
7. Refrigerate formed burgers for 30 minutes
8. Preheat grill to medium-high heat
9. Grill burgers 4-5 minutes per side
10. Add BBQ sauce and bacon in final 2 minutes
11. Toast buns lightly
12. Assemble burgers and serve immediately
