Instructions
- If making homemade special sauce, whisk together mayo, ketchup, relish, vinegar, and paprika in a small bowl. Refrigerate until ready to use.
- Heat a large skillet over medium-high heat. Add oil, then crumble in ground beef. Season with salt and pepper.
- Cook beef, breaking it into small pieces, until fully browned and no pink remains (about 6-8 minutes). Drain excess fat but leave some for flavor.
- While beef finishes cooking, warm tortillas in a dry skillet over medium heat, about 15 seconds per side, until pliable and lightly toasted. Keep warm under a clean kitchen towel.
- To assemble each wrap, lay a warm tortilla on your work surface and spread about 1 Tbsp of special sauce (or Thousand Island dressing) across the center.
- Add approximately ¼ cup of cooked beef on top of the sauce.
- Layer with shredded lettuce, diced onion, and about 1-2 Tbsp of shredded cheese.
- Place two pickle halves on top.
- Fold the bottom edge of the tortilla up over the filling, then fold in the sides and continue rolling from the bottom up, keeping sides tucked in.
