Ingredients
1 lb ground beef (80/20 blend for best flavor)
4 brioche burger buns
4 slices Black Garlic Truffle Gouda cheese
4 tbsp Midnight Aioli (recipe below)
Fresh lettuce leaves
2 large tomatoes, sliced
1 red onion, sliced
Fresh thyme sprigs for garnish
For Midnight Aioli:
1 cup mayonnaise
2 cloves garlic, minced
1 tablespoon freshly squeezed lemon juice
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
1. Make the Midnight Aioli: In a bowl, mix mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper until smooth. Refrigerate for at least 30 minutes to allow flavors to meld.
2. Prepare the beef patties: Gently form ground beef into 4 equal patties (about 4 oz each). Don’t overwork the meat. Season generously with salt and pepper on both sides.
3. Heat your grill or cast-iron skillet over medium-high heat until very hot.
4. Cook the patties: Place patties on hot surface and cook for 4-5 minutes per side for medium-rare (130-135°F internal temperature), or longer for desired doneness. Don’t press down on patties.
5. Add cheese during the last minute of cooking, covering with a lid to melt the truffle gouda perfectly.
6. Toast the brioche buns: Place buns cut-side down on grill or in oven at 350°F for 3-5 minutes until lightly golden.
7. Assemble the burgers: Spread midnight aioli generously on bottom bun, add lettuce, place the cheese-topped patty, add tomato and red onion slices, garnish with fresh thyme, and top with remaining bun.
8. Let burgers rest for 2-3 minutes before serving to allow juices to redistribute. Serve immediately with extra midnight aioli on the side.
Notes
For the juiciest burgers, use 80/20 ground beef and handle gently when forming patties.
Don’t press down on burgers while cooking – this squeezes out all the delicious juices!
Make the midnight aioli ahead of time for even better flavor development.
Black Garlic Truffle Gouda can be found at specialty cheese shops or gourmet grocery stores.
For a smokier flavor, grill the burgers over charcoal or add liquid smoke to the aioli.
