Description
This Blackberry Rum-Glazed Pork Loin is a deliciously tender pork loin coated in a sweet and tangy blackberry rum glaze. Perfect for special occasions or a flavorful family dinner.
Ingredients
2 lbs pork loin
1 cup blackberries (fresh or frozen)
1/2 cup dark rum
1/4 cup brown sugar
1/4 cup soy sauce
2 tablespoons Dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Fresh rosemary for garnish
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a saucepan, combine blackberries, dark rum, brown sugar, soy sauce, Dijon mustard, garlic powder, and onion powder. Cook over medium heat until the blackberries break down and the sauce thickens, about 10-15 minutes.
3. Season the pork loin with salt and pepper. Place it in a baking dish and pour half of the glaze over the top.
4. Roast in the preheated oven for 45-55 minutes, or until the internal temperature reaches 145°F (63°C).
5. Baste the pork with the remaining glaze halfway through cooking.
6. Remove from the oven and let rest for 10 minutes before slicing.
7. Serve garnished with fresh rosemary and drizzle with any remaining glaze.
Notes
For added flavor, marinate the pork in the glaze overnight.
You can substitute the blackberries with other berries like raspberries or blueberries for a different taste.
