2 lbs beef short ribs, bone-in

2 cups Bloody Mary mix (high quality)

1 cup beef broth

1 large onion, chopped

4 garlic cloves, minced

1 pint vanilla ice cream (premium quality)

8 slices brioche bread or potato bread

Salt and black pepper to taste

2 tbsp olive oil for searing


Instructions

1. Season short ribs generously with salt and pepper on all sides

2. Heat olive oil in a heavy-bottomed Dutch oven over medium-high heat

3. Sear short ribs until golden brown on all sides, about 3-4 minutes per side

4. Remove ribs and set aside, keeping the pan with drippings

5. Add chopped onions to the same pan and cook until soft, about 5 minutes

6. Add minced garlic and cook for another minute until fragrant

7. Pour in Bloody Mary mix and beef broth, scraping up browned bits from bottom

8. Return short ribs to pot, cover and reduce heat to low

9. Braise for 2-3 hours until meat is fork-tender and falling off the bone

10. Remove ribs and shred the meat, discarding bones and excess fat

11. Return shredded meat to braising liquid and simmer uncovered for 30 minutes

12. Let mixture cool completely to room temperature

13. Slightly soften ice cream by leaving at room temperature for 10 minutes

14. Assemble sandwiches by spreading ice cream on bread, adding warm short rib mixture, and topping with second slice

15. Serve immediately or wrap individually and freeze for up to 24 hours
