8 slices thick-cut bacon

2 large sweet yellow onions, thinly sliced

1/4 cup high-quality bourbon

2 tablespoons pure maple syrup

1 tablespoon stone ground mustard

1 teaspoon fresh garlic powder

1 teaspoon Old Bay seasoning

8 slices sharp cheddar cheese

4 brioche burger buns

4 leaves butter lettuce

2 large ripe tomatoes, sliced

Instructions

1. Heat cast-iron skillet over medium heat and cook bacon until crispy, about 8-10 minutes. Remove bacon and set aside, keeping 2 tablespoons of fat in pan.

2. Add sliced onions to the same skillet with bacon fat. Cook for 15-20 minutes, stirring occasionally until caramelized and golden brown.

3. Chop cooked bacon into small pieces and add back to caramelized onions. Stir in bourbon, maple syrup, and mustard. Cook for 5 minutes until mixture thickens into jam consistency.

4. Season ground beef with garlic powder, Old Bay seasoning, salt, and pepper. Form into 4 patties, creating small indentations in centers.

5. Preheat grill or griddle to medium-high heat. Cook burger patties 4-5 minutes per side for medium doneness, adding cheese in final minute.

6. Toast brioche buns lightly on grill. Assemble burgers with lettuce, burger patty, generous portion of bourbon-glazed onion and bacon jam, and tomato slices.
