Ingredients
4 bone-in pork chops (1-inch thick)
1/2 cup bourbon whiskey
1/4 cup molasses
2 tablespoons brown sugar
2 cloves garlic, minced
1 teaspoon fresh thyme
6 cups water (for brine)
1/4 cup kosher salt
2 bay leaves
1 cinnamon stick
1 teaspoon whole peppercorns
Instructions
1. Create brine by combining 6 cups water, 1/4 cup kosher salt, bay leaves, cinnamon stick, and peppercorns. Brine pork chops for 12 hours.
2. Mix bourbon, molasses, brown sugar, minced garlic, and fresh thyme to create marinade.
3. Remove pork chops from brine and pat dry. Marinate in bourbon mixture for 2-4 hours.
4. Preheat skillet over high heat. Sear pork chops 3-4 minutes per side.
5. Brush bourbon marinade generously on chops during last few minutes of cooking.
6. Cook until internal temperature reaches 145°F using meat thermometer.
7. Let rest 3-5 minutes before serving to redistribute juices.
