Ingredients
2 lbs pork shoulder
1 cup bourbon
1 cup peach preserves
1 medium onion, chopped
2 cloves garlic, minced
1 tbsp smoked paprika
1 tsp salt
1 tsp black pepper
1 bag tortilla chips
2 cups shredded cheddar cheese
1/2 cup sliced jalapeños
1/4 cup fresh cilantro, chopped
Sour cream, for serving
Instructions

2. 1. In a slow cooker, combine pork shoulder, bourbon, peach preserves, chopped onion, minced garlic, smoked paprika, salt, and black pepper.
3. 2. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.
4. 3. Remove the pork from the slow cooker and shred it with two forks. Return shredded pork to the slow cooker and mix with the sauce.
5. 4. Preheat your oven to 350°F (175°C).
6. 5. On a large baking sheet, spread out tortilla chips in an even layer.
7. 6. Top chips with pulled pork and shredded cheddar cheese.
