Golden-brown breakfast crunchwraps filled with crispy hash browns, scrambled eggs, and savory proteins wrapped in a warm tortilla. Perfect for meal prep and busy mornings.
Ingredients
8 large flour tortillas (10–12 inch)
6 large eggs, scrambled
8 strips bacon, cooked crispy
2 cups frozen hash browns, cooked
1½ cups shredded cheddar cheese
½ cup diced bell peppers
¼ cup diced onions
1 lb breakfast sausage, cooked
Salt and pepper to taste
2 tbsp cooking oil
Instructions
1. Heat skillet over medium heat and scramble eggs until fluffy, set aside
2. Cook bacon strips until crispy, drain on paper towels
3. Cook hash browns according to package directions until golden
4. Sauté diced peppers and onions until soft
5. Cook breakfast sausage and drain excess fat
6. Lay large tortilla flat and add ⅓ cup scrambled eggs to center
7. Layer 2 strips bacon, ¼ cup hash browns, and ¼ cup cheese
8. Add sautéed vegetables and cooked sausage
9. Place smaller tortilla on top of filling
10. Fold edges of large tortilla up and over, creating pleats
11. Heat clean skillet over medium heat with oil
12. Place crunchwrap seam-side down and cook 3-4 minutes until golden
13. Flip carefully and cook additional 3-4 minutes
14. Serve immediately or cool completely for meal prep storage
Notes
Store wrapped crunchwraps in refrigerator up to 4 days
Freeze wrapped individually up to 3 months
Reheat in skillet for best crispy texture
