Description

Ultimate comfort food combining buffalo sauce heat with ranch creaminess, crispy bacon, and melted sharp cheddar cheese over tender elbow macaroni for the perfect family dinner.

Ingredients

Scale

1 lb elbow macaroni or shell pasta

8 oz sharp cheddar cheese, shredded

4 oz cream cheese, softened

1/4 cup buffalo sauce

2 tbsp ranch seasoning mix

6 strips bacon, cooked and crumbled

2 tbsp butter

1/2 cup milk

1/4 cup panko breadcrumbs (optional)

2 green onions, chopped (optional)

Instructions

1. Cook elbow macaroni according to package directions until al dente, about 8-9 minutes. Drain and set aside.

2. Cook bacon strips until crispy. Remove, drain on paper towels, and crumble. Set aside.

3. In a large pot, melt butter over medium heat. Add softened cream cheese and whisk until smooth.

4. Gradually add milk, whisking constantly to prevent lumps.

5. Stir in buffalo sauce and ranch seasoning mix until well combined.

6. Add cooked pasta to the sauce and toss to coat evenly.

7. Fold in shredded sharp cheddar cheese until melted and creamy.

8. Add half of the crumbled bacon and mix gently.

9. Transfer to a greased 9×13 baking dish.

10. Top with remaining bacon crumbles and panko breadcrumbs if using.

11. Bake at 375°F for 20-25 minutes until golden and bubbly.

12. Let rest for 5 minutes before serving. Garnish with green onions if desired.

Notes

For less heat, reduce buffalo sauce and add more ranch seasoning.

Can be made ahead and refrigerated before baking – add 10-15 minutes to bake time.

Store leftovers in refrigerator for 3-4 days.

Reheat with a splash of milk to maintain creaminess.

Try adding jalapeños for extra spice or bell peppers for sweetness.
