Ingredients

1 lb ground beef (80/20 or 70/30 lean to fat ratio)

4 hamburger buns

4 slices pepper jack cheese

2 large jalapeños

1/4 cup mayonnaise

2 tbsp tequila

1 tbsp freshly squeezed lime juice

1 tsp lime zest

Salt and pepper to taste

Fresh cilantro leaves for garnish


Instructions

1. Preheat griddle or cast iron pan to high heat

2. Mix tequila-lime crema ingredients (mayonnaise, tequila, lime juice, lime zest) and refrigerate

3. Form ground beef into 4 equal meatballs (1/4 lb each)

4. Season meatballs with salt and pepper

5. Place meatballs on hot griddle, spacing 4 inches apart

6. Smash burgers flat to 1/4 inch thick using large spatula

7. Cook for 1 minute until juices bubble through the top

8. Flip burgers and immediately add pepper jack cheese slices

9. Cook until cheese melts completely (1-2 minutes)

10. Char jalapeños over open flame until skin blisters and blackens

11. Toast hamburger buns on griddle until golden

12. Assemble burgers with tequila-lime crema, charred jalapeños, and fresh cilantro

Notes

Use high-fat ground beef (80/20 or 70/30) for maximum juiciness and flavor
