Description

Ingredients
2 lbs baby gold potatoes, diced into 1-inch cubes
2 lbs boneless skinless chicken breasts, cut into 1-inch cubes
6–8 strips thick-cut bacon, cooked and crumbled
1 packet Hidden Valley ranch dressing mix
1/2 cup ranch dressing
2 cups sharp cheddar cheese, shredded
1/4 cup olive oil
Salt and pepper to taste
2 tablespoons fresh chives, chopped (for garnish)
Instructions
1. Preheat oven to 425°F (218°C) and grease a large glass baking dish.
2. Wash and dice potatoes into 1-inch cubes, then toss with olive oil, half the ranch packet, salt, and pepper.
3. Spread seasoned potatoes on a baking sheet and roast for 30 minutes, stirring every 10 minutes.
4. While potatoes cook, season chicken cubes with remaining ranch packet and set aside.
5. Cook bacon until crispy, then crumble and drain excess grease.
6. Layer roasted potatoes in the bottom of prepared baking dish.
7. Add seasoned chicken pieces as the second layer.
8. Sprinkle crumbled bacon over chicken layer.
9. Top with shredded cheddar cheese and drizzle with ranch dressing.
10. Bake for 15-20 minutes until cheese is melted and bubbly.
11. Let rest 5 minutes, garnish with fresh chives, and serve hot.
Notes
For crispier bacon, partially cook before adding to casserole
