Ingredients
1 pound lean chicken breast, sliced into strips
2 bell peppers (red and yellow), sliced
1 large white onion, sliced
2 tablespoons vegetable oil
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh lime juice
8 flour tortillas
Optional toppings: salsa, guacamole, sour cream, shredded cheese, cilantro
Instructions
1. Heat 2 tablespoons vegetable oil in a large cast iron skillet over medium-high heat
2. Season chicken strips with chili powder, cumin, paprika, garlic powder, salt, and pepper
3. Cook seasoned chicken in the skillet for 6-7 minutes until golden brown and cooked through
4. Remove chicken from skillet and set aside
5. In the same skillet, sauté sliced bell peppers and onions for 4-5 minutes until tender-crisp
6. Return chicken to skillet and add fresh lime juice, toss to combine
7. Warm flour tortillas in a separate pan until lightly browned and heated through
8. Assemble tacos by filling tortillas with chicken and vegetable mixture
9. Serve immediately with your choice of toppings
