- 1 cup cherry tomatoes, halved
- ½ cup cucumber, diced nice and small
- ¼ cup red onion, thinly sliced
- ¼ cup kalamata olives, pitted and sliced
- ½ cup crumbled feta cheese (get the good stuff!)
- 2 tablespoons chopped fresh parsley
- Juice of ½ a lemon
- Salt & pepper to taste
- 4 large flour tortillas or flatbreads (warmed up slightly)

- Whip up the filling: In a big ol’ bowl, toss together your shredded chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
