Description

Ingredients

1 lb ground beef (80/20)

1 can kidney beans, drained

1 can diced tomatoes

1 small onion, chopped

2 cloves garlic, minced

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp cayenne (optional)

Salt and pepper to taste

1 tbsp olive oil


Instructions

1. Heat olive oil in large pot. Sauté onions and garlic until translucent.

2. Add ground beef. Cook until browned, breaking into crumbles. Drain excess fat.

3. Stir in chili powder, cumin, smoked paprika, cayenne. Toast for 1 minute.

4. Add tomatoes, kidney beans, salt, and pepper.

5. Bring to simmer. Cover and cook on low heat for 30 minutes.

6. Taste and adjust seasoning. Simmer uncovered to thicken, if needed.

7. Serve hot with your favorite toppings.

Notes

Can be made a day ahead—flavor improves overnight.

Add jalapeños or hot sauce for more spice.

Use turkey or plant-based meat for a leaner option.
