Instructions

1. Preheat oven to 350°F (175°C) and line baking sheet with parchment paper

2. Cook breakfast sausage in large skillet over medium heat until browned and crumbled, drain excess fat and set aside

3. In mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy

4. Add egg and vanilla extract to butter mixture, mix until well combined

5. Gradually mix in flour, salt, and baking soda until cookie dough forms

6. Fold in mini chocolate chips to distribute evenly throughout cookie dough

7. Separate biscuit dough into 8 individual pieces on clean work surface

8. Flatten each biscuit piece into 4-inch circle using rolling pin or hands

9. Place 2 tablespoons cookie dough and 2 tablespoons cooked sausage in center of each biscuit circle

10. Carefully wrap biscuit dough around filling, pinching edges tightly to seal completely

11. Place sealed biscuit bombs seam-side down on prepared baking sheet

12. Brush tops with melted butter or beaten egg for golden finish
