Ingredients
4 boneless pork chops (1-inch thick)
2 cups all-purpose flour
3 large eggs
1 cup whole milk
2 cups vegetable shortening for frying
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons kosher salt
1 teaspoon black pepper
For White Gravy:
1/4 cup reserved cooking oil
1/4 cup all-purpose flour
2 cups whole milk
Salt and pepper to taste
Instructions
1. Pound pork chops to 1/4-inch thickness for even cooking
2. Season flour with garlic powder, onion powder, salt, and pepper
3. Beat eggs with milk in a shallow dish
4. Dredge pork chops in seasoned flour, then egg mixture, then flour again
5. Heat vegetable shortening in cast-iron skillet to 350°F
6. Fry pork chops 3-4 minutes per side until golden brown and internal temperature reaches 145°F
7. Remove pork chops and drain on paper towels
8. For gravy: Pour off all but 1/4 cup oil from skillet
9. Whisk flour into hot oil to create roux
10. Gradually add milk, whisking constantly to prevent lumps
11. Simmer until thickened, season with salt and pepper
12. Serve pork chops topped with white gravy

Use a meat thermometer to ensure pork reaches 145°F internal temperature
Let pork chops rest 3-5 minutes before serving to retain juices
For extra crispy coating, double-dredge in flour mixture
