This cloud bread breakfast sandwich combines the airy, protein-packed texture of homemade cloud bread with your favorite breakfast fillings. With only 3 grams of carbs per serving and 15 grams of protein, it’s the perfect low-carb way to start your morning. The neutral flavor pairs beautifully with both sweet and savory combinations.


Ingredients

Scale

3 large egg whites, room temperature

2 oz cream cheese, softened

1/4 teaspoon baking powder

1/4 teaspoon salt

2 large eggs, scrambled

4 strips bacon, cooked crispy

1/2 avocado, sliced

1/4 cup shredded cheddar cheese

1 tablespoon fresh chives, chopped

Salt and pepper to taste


Instructions

1. Preheat oven to 300°F and line a baking sheet with parchment paper

2. Separate eggs while cold, then let whites come to room temperature for 15 minutes

3. Whip egg whites until stiff, glossy peaks form

4. In separate bowl, blend softened cream cheese with egg yolks until smooth

5. Gently fold 1/3 of whipped whites into cream cheese mixture

6. Carefully fold cream cheese mixture back into remaining whites using figure-eight motion

7. Shape into 4 rounds on prepared baking sheet

8. Bake for 28-30 minutes until golden brown

9. Cool completely before assembling sandwiches

10. Layer bottom cloud bread with scrambled eggs, bacon, cheese, and avocado

11. Top with fresh chives and second cloud bread round

12. Serve immediately for best texture
