- 6 large eggs
- 1 cup cottage cheese (use full-fat for extra creaminess)
- ½ cup shredded cheddar cheese (or your favorite melty cheese)
- ¼ cup diced bell pepper (any color works great)
- ¼ cup chopped spinach (fresh or thawed from frozen)
- ¼ teaspoon garlic powder
- Salt & pepper, to taste
- Optional: ¼ cup cooked bacon crumbles or diced ham
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin well, or line with silicone muffin cups.
- In a blender, add eggs, cottage cheese, garlic powder, salt, and pepper. Blend until smooth.
- Pour blended mixture into a large bowl, then stir in cheddar cheese, bell pepper, spinach, and any optional ingredients.
- Fill each muffin cup about ¾ full.
- Bake for 22–25 minutes, or until centers are set and tops are golden.
- Let cool in tin for 5 minutes before removing. Serve warm or store in refrigerator.
