Description

Fluffy, protein-packed cottage cheese egg bites perfect for busy mornings and meal prep. These easy breakfast bites combine eggs, cottage cheese, and fresh vegetables for a nutritious grab-and-go option.


Ingredients

  • 6 large eggs
  • 1 cup cottage cheese (use full-fat for extra creaminess)
  • ½ cup shredded cheddar cheese (or your favorite melty cheese)
  • ¼ cup diced bell pepper (any color works great)
  • ¼ cup chopped spinach (fresh or thawed from frozen)
  • ¼ teaspoon garlic powder
  • Salt & pepper, to taste
  • Optional: ¼ cup cooked bacon crumbles or diced ham

Instructions

  • Preheat oven to 350°F (175°C). Grease a muffin tin well, or line with silicone muffin cups.
  • In a blender, add eggs, cottage cheese, garlic powder, salt, and pepper. Blend until smooth.
  • Pour blended mixture into a large bowl, then stir in cheddar cheese, bell pepper, spinach, and any optional ingredients.
  • Fill each muffin cup about ¾ full.
  • Bake for 22–25 minutes, or until centers are set and tops are golden.
  • Let cool in tin for 5 minutes before removing. Serve warm or store in refrigerator.
