4 slices sourdough bread

2 tablespoons butter, softened

4 ounces brie cheese, sliced (rind removed or kept based on preference)

4 tablespoons cranberry sauce (leftover or canned)

4 strips bacon, cooked until crispy

Optional: Fresh rosemary or thyme for garnish


Instructions

1. Butter one side of each slice of sourdough bread generously to ensure golden, crispy crust.

2. Heat a large skillet or griddle over medium heat.

3. On the unbuttered side of two bread slices, spread 2 tablespoons of cranberry sauce evenly.

4. Layer the brie cheese slices over the cranberry sauce.

5. Place 2 strips of crispy bacon on top of the brie cheese.

6. Top with the remaining bread slices, buttered side facing up.

7. Place sandwiches in the preheated skillet and grill for 3-4 minutes until the bottom is golden brown and crispy.

8. Carefully flip the sandwiches and grill the other side for 3-4 minutes until golden brown and the brie is melted and oozing.

9. Remove from heat, let rest for 1 minute, then slice diagonally.

Notes

For best results, use high-quality brie cheese with a creamy interior. Avoid brie that’s too runny or too firm.

Leftover cranberry sauce works perfectly, but canned cranberry sauce is an excellent substitute.

Cook bacon until crispy but not burnt for optimal texture and flavor.

Medium heat is crucial – too high will burn the bread before the cheese melts.

For extra richness, add a thin layer of cream cheese along with the brie.

This recipe can be made vegetarian by omitting the bacon and adding caramelized onions instead.
