Garnished with crunchy pecans and fresh rosemary, they’re an impressive yet incredibly simple holiday appetizer that disappears in minutes. Perfect for entertaining, these festive bites deliver sophisticated flavor with minimal effort!

Ingredients

Scale
  • 1 sheet of puff pastry, thawed (store-bought works just fine)
  • 1 small wheel of Brie cheese (about 8 oz), rind on or off — chef’s choice
  • ½ cup whole berry cranberry sauce (canned or homemade)
  • ¼ cup chopped pecans (optional, but highly recommended)
  • Fresh rosemary sprigs (just a few needles per bite)
  • A little flour for dusting your surface
  • Cooking spray or melted butter for greasing the pan

Instructions

  • Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or a touch of melted butter to prevent sticking.
  • Lightly flour your work surface and roll out your puff pastry sheet just a bit to smooth it. Cut it into 24 equal squares.
  • Press each pastry square into a mini muffin cup, allowing the corners to stick up a bit like a little basket.
  • Cut the Brie into ½-inch cubes and place one cube into each puff pastry cup.
  • Spoon about a teaspoon of cranberry sauce over the Brie — not too much, just enough to coat it.
  • Sprinkle with chopped pecans and a small bit of rosemary if desired.
  • Bake for 13–15 minutes, or until the pastry is puffed and golden and the cheese is melted and bubbly.
  • Let cool for a couple minutes before removing from the tin, as melted Brie is extremely hot.
  • Serve warm and enjoy!

Notes

  • Make-Ahead Option: Assemble up to 24 hours ahead and refrigerate unbaked. Add 2-3 minutes to baking time.
  • Freezer Option: Freeze assembled unbaked bites for up to a month. Bake directly from frozen, adding 5-7 minutes to baking time.
  • Cheese Tip: Freeze Brie for 15 minutes before cutting for cleaner cubes.
  • Cranberry Sauce: If using canned, choose whole berry sauce and drain any excess liquid.
  • Variations: Try fig jam, apple butter, or add prosciutto for different flavor combinations.
