Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

12 oz penne pasta

1 lb fresh asparagus, trimmed and cut into 2-inch pieces

8 oz cremini mushrooms, sliced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

2 tablespoons olive oil

2 tablespoons fresh parsley, chopped

Salt and pepper to taste


Instructions

1. Cook penne pasta according to package directions until al dente. Drain and set aside.

2. Season chicken pieces with salt and pepper. Heat 1 tablespoon olive oil in large skillet over medium-high heat.

3. Cook chicken pieces for 6-8 minutes until golden brown and cooked through. Remove and set aside.

4. In same skillet, add remaining olive oil. Sauté sliced mushrooms for 4-5 minutes until golden.

5. Add asparagus pieces and cook for 3-4 minutes until bright green and tender-crisp.

6. Add minced garlic and cook for 1 minute until fragrant.

7. Pour in chicken broth and heavy cream. Bring to gentle simmer.

8. Add Parmesan cheese and stir until melted and sauce is smooth.

9. Return cooked chicken and pasta to skillet. Toss gently to combine.

10. Heat for 2 minutes, stirring continuously to prevent sticking.

11. Garnish with fresh parsley and serve immediately while hot.

Notes

For best results, use fresh asparagus and high-quality Parmesan cheese.

Don’t overcook the asparagus – it should remain bright green and tender-crisp.

Serve immediately while sauce is creamy and hot.

Leftovers can be stored in refrigerator for 3-4 days.
