These crispy chickpea and avocado bites are a delightful blend of textures and flavors, perfect for any gathering or as a refined snack. Enjoy the creamy avocado paired with crunchy chickpeas, seasoned to perfection.
Ingredients
1 can chickpeas, drained and rinsed
1 ripe avocado, mashed
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and pepper to taste
Fresh cilantro, for garnish
Lime wedges, for serving
Instructions
1. Preheat the oven to 400 degrees F (200 degrees C).
2. In a bowl, combine the chickpeas, olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until well coated.
3. Spread the chickpeas on a baking sheet and roast for 25-30 minutes, or until crispy.
4. In another bowl, mix the mashed avocado with lime juice, salt, and pepper.
5. Once the chickpeas are done, let them cool slightly.
6. Serve the crispy chickpeas on top of the avocado mixture, garnished with fresh cilantro and lime wedges.
Notes
For an extra kick, add a pinch of cayenne pepper to the chickpeas before roasting. These bites are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
