Ingredients
2 pounds baby potatoes
1 tablespoon olive oil
1 teaspoon sea salt
1/2 teaspoon black pepper
1 cup marinara sauce
2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 cup fresh basil, chopped
Red pepper flakes to taste
Instructions
1. 1. Preheat the oven to 425°F (220°C).
2. 2. Boil the baby potatoes in salted water until fork-tender, about 15-20 minutes.
3. 3. Drain the potatoes and let them cool slightly.
4. 4. On a baking sheet, toss the potatoes with olive oil, sea salt, and black pepper.
5. 5. Smash each potato gently with a fork or the bottom of a glass.
6. 6. Bake for 20-25 minutes until crispy and golden.
7. 7. Remove from the oven and spread marinara sauce over each potato.
8. 8. Top with mozzarella and Parmesan cheese.
9. 9. Return to the oven and bake until the cheese is bubbly and golden, about 10 minutes.

Notes
