Description

Date Snickers Bars are a healthy, no-bake version of the classic candy bar made with medjool dates, natural peanut butter, and dark chocolate. These guilt-free treats combine sweet and salty flavors in every bite while providing natural nutrients and fiber.


Ingredients

2 cups pitted Medjool dates (about 1215 dates)

1 cup roasted peanuts, divided

1/2 cup natural peanut butter

2 tablespoons water

1 cup dark chocolate chips

1 tablespoon coconut oil

1/4 teaspoon vanilla extract (optional)

Pinch of flaky sea salt for topping


Instructions

1. Line an 8×8 inch square pan with parchment paper, leaving overhang for easy removal.

2. In a food processor, pulse 3/4 cup peanuts until roughly chopped. Add pitted dates and process until mixture forms a sticky paste.

3. Press date-nut mixture firmly into prepared pan to create an even base layer.

4. For caramel layer, blend remaining 1/2 cup peanut butter with 4-5 soft dates and 2 tablespoons water until smooth and creamy.

5. Spread peanut butter mixture evenly over base layer and sprinkle with remaining 1/4 cup chopped peanuts.

6. Melt chocolate chips with coconut oil in microwave in 30-second intervals, stirring between each, until smooth.

7. Pour melted chocolate over peanut layer and spread evenly with offset spatula.

8. Sprinkle with flaky sea salt and refrigerate for at least 30 minutes until set.

9. Remove from pan using parchment overhang and cut into 12 bars with sharp knife.

Notes

Store in airtight container in refrigerator for up to 1 week or freeze for up to 2 months.

For easier cutting, let bars sit at room temperature for 5 minutes before slicing.

Substitute almond butter or sunflower seed butter for peanut allergies.

Use dairy-free chocolate chips to keep recipe vegan.

For softer bars, add an extra tablespoon of coconut oil to chocolate layer.
