Ingredients

1 pound medium shrimp (1620 count), peeled and deveined

2 cups stone-ground yellow cornmeal

3 large eggs, beaten

1 cup heavy cream

¼ cup fresh lemon juice

3 tablespoons butter

2 tablespoons all-purpose flour

1 teaspoon kosher salt

½ teaspoon fresh ground black pepper

1 teaspoon garlic powder

½ teaspoon cayenne pepper

1 teaspoon paprika

Vegetable oil for frying

Fresh parsley for garnish

Lemon wedges for serving


Instructions

1. Pat shrimp completely dry with paper towels and season with salt and pepper

2. Set up breading station with beaten eggs in one dish and seasoned cornmeal mixture in another

3. Heat oil to 350°F using a deep-fry thermometer

4. Dip each shrimp in beaten eggs, then coat thoroughly in seasoned cornmeal mixture

5. Fry shrimp in small batches for 2-3 minutes until golden brown and crispy

6. For lemon cream gravy, melt butter in pan and whisk in flour to create smooth roux

7. Gradually add heavy cream and lemon juice, whisking constantly until thickened

8. Season gravy with salt and pepper to taste

9. Serve immediately with warm lemon cream gravy and fresh lemon wedges

Maintain oil temperature at 350°F for best results
