Description

This Double Bacon Cheeseburger Mac & Cheese Meatloaf is the ultimate comfort food fusion dish that combines the rich flavors of a bacon cheeseburger with creamy mac and cheese, all wrapped up in a hearty meatloaf. Perfect for family dinners and special occasions.

Ingredients

Scale

2 lbs lean ground beef

1 cup panko bread crumbs

1 cup shredded cheddar cheese

8 slices bacon

1 tablespoon Montreal steak seasoning

1 medium onion, diced

2 large eggs

1 teaspoon salt

1/2 teaspoon black pepper

2 cups prepared mac and cheese

1/4 cup ketchup (for glaze)

2 tablespoons yellow mustard (for glaze)

Instructions

1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper

2. In a large bowl, combine ground beef, panko bread crumbs, diced onion, eggs, salt, pepper, and Montreal steak seasoning

3. Mix ingredients gently until just combined – avoid overmixing to prevent tough meatloaf

4. Shape the meat mixture into a loaf on the prepared baking sheet

5. Create a well or indentation in the center of the meatloaf for the mac and cheese

6. Spoon the prepared mac and cheese into the center well

7. Carefully fold the meat mixture over the mac and cheese to seal it inside

8. Wrap the entire meatloaf with bacon slices, securing with toothpicks if needed

9. Bake for 35 minutes, then brush with ketchup and mustard glaze

10. Continue baking for 10-15 minutes until internal temperature reaches 160°F (71°C)

11. Let rest for 10-15 minutes before slicing and serving

Notes

Use a meat thermometer to ensure proper doneness – internal temperature should reach 160°F (71°C)

For extra crispy bacon, broil the meatloaf for 2-3 minutes after baking

Let the meatloaf rest before slicing to prevent the filling from leaking out

Store leftovers in the refrigerator for up to 3 days

This recipe can be made ahead and refrigerated before baking

Serve with classic sides like mashed potatoes or green vegetables
