Description
Gourmet bacon wrapped meatloaf with Swiss cheese and mushrooms, ready in just 1 hour 35 minutes.
Ingredients
2 lbs lean ground beef
2 large eggs
10 Swiss cheese slices
1 lb sliced mushrooms
2 tbsp light olive oil
Dried parsley
Black pepper
Coconut flour
Chicken stock
Cream cheese
Instructions
1. Preheat oven to 350°F.
2. In a large bowl, mix ground beef, breadcrumbs, milk, and eggs.
3. Cook bacon until crisp; set aside.
4. In same pan, sauté mushrooms and onions until soft.
5. Shape meat mixture into a loaf in baking dish.
6. Wrap loaf with bacon slices.
7. Bake for 60 minutes.
8. Add Swiss cheese on top; bake 5–10 minutes until melted.
Notes
Use thick-cut applewood smoked bacon for best flavor.
Let meatloaf rest 10 minutes before slicing.
