4 slices of artisanal bread

6 slices of double-smoked bacon

2 tablespoons of unsalted butter, divided

2 cups of mixed triple cheese (cheddar, gouda, and parmesan)

1/4 cup of caramelized onions

Instructions

1. Preheat a panini press or grill to medium-high heat

2. Cook the double-smoked bacon until crispy, then set aside on paper towels

3. Butter one side of each bread slice using 1 tablespoon of butter

4. Place one slice, butter-side down, in the panini press
