Description

Easy Loaded Bacon Cheeseburger Bite Casserole combines all the flavors of a classic cheeseburger in one convenient, crowd-pleasing dish. Featuring seasoned ground beef, crispy bacon, melted cheese, and fluffy biscuit pieces, this comfort food casserole is perfect for busy weeknights or feeding a hungry crowd.

Ingredients

Scale
  • 1 lb ground beef (80/20 blend recommended)
  • 1 small yellow onion, finely diced
  • 1 tablespoon Worcestershire sauce
  • Salt and black pepper to taste
  • 8 slices thick-cut bacon, cooked crisp and crumbled
  • 1½ cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 (10.5 oz) can cheddar cheese soup
  • ½ cup milk
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tube refrigerated biscuit dough, cut into quarters
  • Optional toppings: chopped pickles, green onions, sesame seeds

Instructions

  • Preheat the Oven: Fire that oven up to 375°F (190°C) and grease a 9×13-inch casserole dish.
  • Brown the Beef: In a big ol’ skillet, cook your ground beef and diced onion over medium-high heat. Once browned and the onions are soft, drain off any grease. Stir in Worcestershire, salt, and pepper. Set aside.
  • Make it Saucy: In a separate bowl, whisk together the cheddar cheese soup, milk, ketchup, and mustard until smooth. Stir it into your beef mixture until everything’s coated in that creamy, tangy goodness.
  • Add the Bacon and Cheese: Fold in half the cheddar, all the mozzarella, and most of your crumbled bacon (save a handful for topping later).
  • Biscuit Layer: Toss those biscuit pieces into the bottom of the greased casserole dish. Pour your beefy-cheesy mixture right over the top and gently spread it out.
  • Top and Bake: Sprinkle on the remaining cheddar cheese and bacon. If you’re feeling fancy, toss on some sesame seeds for that burger bun vibe.
  • Bake It Up: Pop it in the oven and bake for about 25–30 minutes, or until bubbly, golden, and those biscuit pieces are cooked through and puffed up.
  • Serve It Hot: Let it rest a few minutes before scooping. Serve with diced pickles and green onions if you’re feelin’ wild.

Notes

  • For best results, use 80/20 ground beef for optimal flavor and texture
  • Cook bacon until crispy but not burnt – it will continue cooking in the oven
  • Can be assembled 24 hours ahead and refrigerated before baking
  • Freezes well for up to 3 months when properly wrapped
  • Add 5-10 minutes to baking time if cooking from chilled
