  • 1 small yellow onion, peeled

  • 2 large eggs, lightly beaten

  • ¼ cup all-purpose flour (plus extra for dusting)

  • 1 teaspoon kosher salt

  • ½ teaspoon freshly ground black pepper

  • Vegetable oil (for frying—about ½ inch depth in skillet)

  • Optional garnishes: sour cream, applesauce, chopped chives or parsley


Instructions

  • Grate potatoes and onion using a box grater or food processor.

  • Drain mixture using a towel or cheesecloth to remove excess moisture.

  • Mix in eggs, flour, salt, and pepper until evenly combined.

  • Heat oil in a skillet over medium-high until shimmering.

  • Form patties with about ¼ cup of the mixture and place into hot oil.

  • Fry each side for 3–4 minutes until deep golden brown.

  • Drain on paper towels. Keep warm in a 200°F oven if needed.

  • Serve with your favorite toppings.
