Ingredients
2 pounds russet potatoes (about 4 medium), peeled
1 small yellow onion, peeled
2 large eggs, lightly beaten
¼ cup all-purpose flour (plus extra for dusting)
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
Vegetable oil (for frying—about ½ inch depth in skillet)
Optional garnishes: sour cream, applesauce, chopped chives or parsley
Instructions
Grate potatoes and onion using a box grater or food processor.
Drain mixture using a towel or cheesecloth to remove excess moisture.
Mix in eggs, flour, salt, and pepper until evenly combined.
Heat oil in a skillet over medium-high until shimmering.
Form patties with about ¼ cup of the mixture and place into hot oil.
Fry each side for 3–4 minutes until deep golden brown.
Drain on paper towels. Keep warm in a 200°F oven if needed.
Serve with your favorite toppings.

Be sure to thoroughly squeeze out moisture to ensure crispy texture.
Russet potatoes work best due to their high starch content.
Latkes can be made ahead and reheated in the oven for convenience.
