Ingredients

8 corn tortillas

6 large eggs

1 cup milk

1 cup shredded cheese (cheddar or your choice)

1 cup diced vegetables (bell peppers, onions, spinach)

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1 tablespoon olive oil


Instructions

1. Preheat the oven to 375 degrees F (190 degrees C).

2. In a large bowl, whisk together the eggs, milk, salt, pepper, and paprika.

3. In a greased sheet pan, layer 4 tortillas on the bottom.

4. Pour half of the egg mixture over the tortillas.
