Description

This classic New York-inspired breakfast sandwich layers crispy oven-baked bacon, bodega-style eggs, and melty cheese inside perfectly toasted everything bagels for a savory, satisfying meal that’s quick to prepare and packed with flavor.


Ingredients

2 fresh everything bagels, sliced

6 strips regular-cut bacon

4 large eggs

4 slices American cheese

2 tablespoons butter

Salt and pepper to taste

Optional: cream cheese or mayo for spreading


Instructions

1. Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper. Arrange bacon strips without overlapping. Start in cold oven and bake 15–20 minutes until crispy. Transfer to a paper towel-lined plate.

2. Slice bagels in half. Heat a skillet over medium heat, melt butter, and toast bagel halves cut-side down until golden, about 2–3 minutes. Remove and set aside.

3. Crack eggs into the skillet. Immediately puncture yolks and spread over whites for bodega-style texture. Cook until whites are 80% set. Season with salt and pepper.

4. Place cheese slices over eggs. Cover pan for 30–60 seconds to melt. Fold eggs into rectangular shapes to fit bagels.

5. Assemble sandwiches by placing bacon strips over bottom bagel halves, followed by folded cheesy eggs. Top with remaining bagel halves. Serve hot.

Notes

Start bacon in a cold oven for better rendering and less splatter.

For added moisture and flavor, spread cream cheese or mayo on toasted bagels.
