Ingredients

Scale

For the Filling:

  • 1 lb ground beef (80/20 for juicy flavor)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ cup finely shredded cheddar cheese
  • ½ cup finely shredded mozzarella cheese
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic, minced

For the Dough:

  • 1 tube (17.3 oz) refrigerated pizza dough

For the Garlic Butter Topping:

  • 2 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 3 tablespoons grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  • Preheat & Prepare: Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or lightly coat with nonstick spray.
  • Season & Brown the Beef: In a large skillet over medium-high heat, add ground beef, minced garlic, salt, pepper, garlic powder, onion powder, and Worcestershire sauce. Break up the meat with a spatula and cook until no pink remains and you’ve achieved some tasty browned bits—about 6–8 minutes. Drain any excess fat.
  • Incorporate Cheese: Remove the skillet from heat and stir in the shredded cheddar and mozzarella until melted and thoroughly combined with the meat mixture.
  • Prepare Dough: Roll out the pizza dough on a lightly floured surface into a roughly 12×16-inch rectangle. Using a pizza cutter or sharp knife, slice the dough into 24 even squares.
  • Fill & Seal: Spoon about 1 tablespoon of the cheeseburger mixture into the center of each dough square. Pull the corners of the dough up over the filling and pinch tightly to seal, forming little balls. Place each sealed bomb seam-side down on your prepared baking sheet.
  • Create Garlic Butter Mixture: In a small bowl, whisk together melted butter, minced garlic, and grated Parmesan. Brush each cheeseburger bomb generously with this garlic-Parmesan butter.
  • Bake: Slide the baking sheet into the oven and bake for 15–18 minutes, until the dough has puffed up and turned golden brown.
  • Finish & Serve: Once out of the oven, sprinkle with chopped parsley if desired. Let rest for 1-2 minutes (they’ll be hot!), then serve with your favorite dipping sauces.

Notes

  • For extra cheesy bombs, you can place a small cube of cheese (cheddar or mozzarella) in the center of each meat portion before sealing.
  • Make sure to pinch the dough seams tightly to prevent leakage during baking.
  • If your kitchen is warm, refrigerate the assembled bombs for 10 minutes before baking to help them maintain their shape.
  • These freeze beautifully! Prepare through step 5, freeze on a baking sheet until solid, then transfer to a freezer bag for up to 3 months. Thaw in refrigerator before continuing with the recipe.
  • For a spicy variation, add ¼ teaspoon red pepper flakes to the meat mixture or mix a dash of hot sauce into the butter topping.
