8 oz filet mignon (A5 Wagyu or Prime Grade), 1.5-2 inches thick

23 fresh whole ghost peppers

1/4 cup aged Caribbean dark rum (Appleton Estate or Mount Gay recommended)

1 cup high-fat heavy cream

Salt and freshly ground black pepper to taste

2 tablespoons avocado or grapeseed oil

Cast-iron skillet for searing


Instructions

1. Remove filet mignon from refrigerator 30 minutes before cooking to allow even temperature distribution

2. Pat steak completely dry with paper towels for optimal searing

3. Season generously with salt, black pepper, and finely minced ghost pepper (wear gloves)

4. Heat cast-iron skillet over high heat until extremely hot and smoking
