Description
Fresh and vibrant green goddess salad featuring crisp mixed greens, seasonal vegetables, protein, and signature creamy herb dressing made with fresh basil, parsley, and chives.
Ingredients
6 cups mixed greens (spinach, arugula, lettuce)
1 cup cucumber, sliced
1 cup snap peas, trimmed
1 cup radishes, thinly sliced
8 oz grilled chicken breast, sliced
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup fresh basil leaves
2 tablespoons fresh parsley
2 tablespoons fresh chives
2 cloves garlic, minced
2 tablespoons fresh lemon juice
1 teaspoon anchovy paste (optional)
Salt and pepper to taste
Instructions
1. Prepare all vegetables by washing, drying, and cutting as specified
2. Grill chicken breast until internal temperature reaches 165°F, then slice
3. In food processor, combine mayonnaise, sour cream, fresh herbs, garlic, lemon juice, and anchovy paste
4. Process dressing until smooth and creamy, season with salt and pepper
5. In large salad bowl, combine mixed greens, cucumber, snap peas, and radishes
6. Add sliced grilled chicken on top
7. Drizzle with green goddess dressing just before serving
8. Toss gently and serve immediately
Notes
Store dressing separately in refrigerator for up to 5 days
For vegan version, substitute Greek yogurt for sour cream and omit anchovy paste
Add avocado, nuts, or cheese for extra richness and flavor
Dressing can be made 24 hours ahead for better flavor development
