Ingredients
1–1.5 pound pork tenderloin, center-cut and trimmed
2–3 habanero peppers, finely minced
1/4 cup pure maple syrup
1/2 cup unsalted butter
2 tablespoons premium whiskey
2 tablespoons brown sugar
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
Instructions
1. Combine habanero peppers, maple syrup, garlic powder, and herbs in a bowl
2. Place pork tenderloin in zip-top bag, add marinade, seal and refrigerate 2 hours
3. Caramelize butter in cast-iron skillet until golden, carefully add whiskey
4. Scrape pan bottom to incorporate caramelized bits, mix in seasonings
5. Preheat oven to 400°F while preparing charred whiskey butter
6. Sear marinated pork in hot skillet on all sides until browned
7. Transfer to oven and roast 15-20 minutes until internal temp reaches 145°F
8. Remove from oven and rest 10 minutes before slicing
9. Slice and serve topped with charred whiskey butter
